Making sous vide pork chops (the 2" thick ones from Costco, something sous vide is perfect for).

Trying my damndest to empty a couple low kegs so I can get my competition beers carbed for bottling next weekend.

Anyway, this is a thread for sharing what it is you're doing on this, or any following, weekend.

Have you started selling your brew at all? Like at the local farmers market and stuff? Would be interested to know how you get on.

It's not legal to sell homebrew.

Making it 10 gallons at a time I wouldn't be willing to part with it at craft beer prices.

Perhaps if you sold shares of a bridge in brooklyn, and celebrated that with an appropriate sum of brew.

Yeah, but still... I'm not full of myself or anything, it just isn't worth selling my beer for even $5/12oz. Making beer on the scale I'm making it, it just doesn't make any sense to sell it. I'd have to make at least 50g per batch before it'd start being worth it to sell at craft beer prices.

I spend a good 6 hours brewing on a brew day. Then the beer needs to sit in the fermentation chamber for at least two weeks. I only have two fermentation chambers, so 20g fermenting at a time. Then I spend another couple hours prepping kegs and such to transfer the beer. My kegerator only holds 4 kegs at 5g each. So that's only 20g ready to drink at the most. Bottling takes a whole bunch more prep. If I were to bottle 20g that'd be an entire days worth of work easy. I save bottles so I have plenty for my needs, but if I was selling beer I'd need a much larger more consistent supply of bottles. Obviously it doesn't make economic sense for me to go buy cases of craft beer so I could drink the beer and use the bottles to put my beer in to sell. So where would I get the bottles from?

Anyway, selling homebrew just doesn't make sense. No way to make it make economic sense.

Same here. We are selling our home so we've been doing all the little things that stack up over the years. Doing them for someone else instead of ourselves, dammit!

Depending on how you use the peach and cardamom you might sous vide the pork plain and then add the other ingredients just before you sear the outside of the meat. But it'd probably work fine to coat the meat before vacuum sealing it and sous vide it. I have heard that some flavors intensify too much and other times the flavor gets soaked up in the fat/juice that gets extracted form the meat and the meat doesn't carry much of the flavor.

I'm sure that would work. I'd have to look up the recipe to be certain but IIRC the cardamom is added into the peach syrup, which the chops are added to after cooking most of the way.

I'm often lazy though and sometimes a fan of crockpot type cooking. Throw it in the bag and voilà! 96 hours later you have 5 star cuisine. I also like the flavor cooked into the meat instead of coating it.

Pretty cool you're trying this. Do you have a pot or something that keeps the temperature right?
 
Great thread topic. Drove over to North Austin and had a grill out with some buds from grad school. Had a bit too much to drink and passed out at their place. Just took the long commute back to Houston on I-10. It was brutal. They shut down everything near the Heights. Now im in Katy doing another grill out with my gfs sister and her husband. Ima get fat lol
