I have a love hate relationship with Cafe Rio. I really only like their food when smothered with their salsa fresca. I've never found a go-to option at Costa Vida and they are never as busy so their food has never seemed as fresh. I think both of them have gotten worse recently as they seem like they are trying to copy Chipotle more. Chipotle is trash IMHO. I've only had it a few times but it has been disappointing every time. I thought maybe I just wasn't ordering right, but getting good food shouldn't be a challenge. I live close to Jordan Landing in West Jordan and all three are there, when I get one of them it is Cafe Rio even though like I said I have a love hate relationship and I hate dealing with them.Cafe Rio and Costa Vida are literally the same thing. They both originated in Utah and Cafe Rio actually sued Costa Vida for copying their concept entirely. That said I think Cafe Rio barely gets the edge here. Interesting. I have one near me and literally have never been and I have no idea why I refuse to go there.But the real answer is El Pollo Loco

We were in Utah last week and noticed that they have them now, so that's probably why it's on my mind.Interesting. I like Tacos Lopez better than any of these, but I wanted to see what people felt about these three that are based on the same concept. They've got bins of ingredients and as you walk down the line they ask which ones you want and make your food while you're standing there.Tacos lopez ftw

Its pretty good. Its kind of like a taco time or del taco or something but slightly better. Nothing to go out of your way to try but if you are in the neighborhood its pretty good. Get their shredded beef items. Their hours are weird as well.No but I've heard good things.
