All of those sith and Jedi died at the hand of other Jedi. Luke got hit by a bolt and still kicked ***. There's no way in hell a trained sith apprentice skilled in the art of light saber combat should lose to some young girl that has never in her life had any Jedi training or light saber training. He should've been able to beat her with a blindfold on. What's a little energy bolt wound to a force user. Sith and Jedi alike have been known for blocking physical pain through the force.

Calm down. Rey beating Ren was unlikely but there are multiple possible mitigating factors that combine to explain the victory. Excuse me while I get my nerd on.
#1.) Kylo Ren is injured physically and emotionally. He just got shot and is bleeding out. This could obviously hinder his ability to fight even if he attempts to use the force to block the pain it would require focus and control to do so. Is Ren in control? Is he focused? The movie shows him not to be so in previous scenes. This is exacerbated by murdering his own father. He expected that through killing his dad that he would become stronger in the dark side but the opposite is true when he immediately feels remorse for going through with it. He steels himself for the fight, punishing himself by punching his own woundto make himself angry. He can do stuff that even Vader couldn't, like pry info from dudes and freeze blaster bolts in midair. He's immensely powerful at times but unfocused and out of control.
Tl:dr Ren is injured and has a lot in his mind. He's the clippers on the fourth game in five nights + locker room turmoil
#2.) Rey can handle a staff, therefore she can handle a lightsaber especially with force backing that she previously did not have. she takes on two assailants at the same time despite being surprised at the beginning of the movie. She's no pushover.
#3.) Rey is obviously very powerful with the force very quickly. Why? That is the subject of speculation for below. But the fact can't be denied. It obviously "awakened" within her at some point in the movie, most likely when being force interrogated or maybe when she touched the lightsaber. In any case without being trained she already proved the force equal of Ren prior to the fight when she resisted then completely reversed the mind-rape. It was obvious from that point that Ren was in trouble. She then uses a sophisticated mind trick to escape. Rey is untrained? I don't think so. It's not that Ren is a weakling it's that Rey is that powerful and her win was foreahadowed sufficiently. And the question is when and how she was trained not if. She's more Jason Bourne than anything.
#4.) When is the last time Ren had to duel somebody with a lightsaber? All we know is that he executed people with it and liked cutting unsuspecting torture chairs and random electric consoles. He hasn't dusted off hia saber skills in more than fifteen years most likely. otherwise how could a non-sensitive like Finn get a shot in. He shows how powerful he can be in other ways listed above.
Ren is no Vader and he shouldn't be. My guess is he gets his act together and comes back with a proper vengeance in the second movie.
Hes an extremely powerful force user, but an unfocused, emotionally wild, petulant child who got shot and killed his poor dad and feels bad about it. He also got freaking shot. Rey is equal to or more powerful and obviously trained in some fashion. The victory was foeahadowed.
One more thing: like in the OT and contrary to the Prequel Trilogy the force is portrayed as more mystical and magical. In other words IT DOESNT FOLLOW YOUR RULES. In the PT it was like i've trained for this long and you've trained longer therefore you win. In this one it's like who cares! Rey was at peace and closed her ****ing eyes. she became one with the force in that moment. Did you miss that or something?
