Hunting For Meat

I have been working on changing my lifestyle to get my weight (and blood pressure, stamina, physical fitness, etc.) in order, and make it for the long haul. As a result I find myself eating far fewer carbs and much more meat. I have partnered up with a guy at work who has a small farm-zoned lot (couple acres) and he has started raising cows for beef. We bought 5 head, I help pay for feed, and he does the work. We then have them killed and butchered and sell the meat to family and friends for a small profit (very small, mainly just enough to make up for our effort and inconvenience) and then stock our own freezers.

For the last 2 we sold, the people who bought were offered a "variety pack" with different cuts and then half of their poundage in ground beef, all for about $3.25 per pound. If they wanted to pick and choose we upped it to between $4 and $5 per pound. For me and my friend, we are getting our beef for $2.70 to $2.80 per pound regardless of cut, and we get first choice.

So I am currently dry-aging a whole loin primal (sirloin, tenderloin, and top sirloin all in one big piece basically). Oh yeah.

My friend really enjoys it. We know they were raised ethically and given good feed and care, and we know they are killed and butchered ethically and efficiently, and so far the beef is bar none the best I have had, almost bordering on kobe levels of marbeling and such the way my friend cares for them. And his family loves it. My daughter, who wants to be a vet, gets to help. All around a great arrangement.
