Why not a dual-purpose pick? Something with texture and any semblance of flavor, like your 2nd pick - red onions. Onions have a bit of a similar texture anyway.

I have a plan, there were other things i could have picked but i either don't like the taste or can't be bothered making.

The king of swiss style cheeses, imo. Great pick. Love an aged emmentaler on any kind of hot sandwich. Awesome. It is also better than gruyere on french onion soup imo, has a little more sweetness that complements well. Love that stuff.

Without the crunchy goodness of lettuce the sandwich will end up being too soggy and fatty. Lettuce and mayo go well together, plus the mayo i'm using is tangy so it will balance nicely.

Emmentaler is different from basic american style swiss cheese, imo. It has a distinct flavor that regular old "deli swiss" just does not have.
