I once ordered a brisket sandwich at a BBQ in Texas with mashed potatoes. MIND BLOWING!! It works how I got the idea for this sandwich

What kind of bacon? I wanna select a bacon with my next pick.

Peppered or maple cured or other? Belly bacon or side bacon or turkey? Two distinct cuts jest like various beef cuts. Panchetta, Rashers, Irish, Gypsi? Baked, fried, smoked?
