Because he's a good defender. I think it's smarter to go after the bad defenders and keep Klay off ball. The Rockets tried to go at Mitchell in Game 2 when he got in foul trouble and it really backfired on them.

And it's Game 7, refs are going to want to call as little fouls as possible. We have seen them hold onto the whistle through some physical play in the 2nd quarter. Foul hunting doesnt work nearly as well in the playoffs. Harden can still draw fouls, but when he has gone to his "Im doing this thing just to get a foul" mode it usually doesnt work out well.
Making Curry work on defense is way more important IMO than trying, and probably failing, to get Thompson in further foul trouble.
