I love corn on the cob, and will only eat it on the day it is picked. The moment it is picked, the sugar begins to change to starch, so time is of the essence if one wants their sweet corn to actually be sweet.
My wife thinks I'm crazy for refusing to eat sweet corn from a supermarket. I want it the day it is picked or not at all.....
After trial and error, my local farmer only offers Butter and Sugar, and Silver Queen. Silver Queen offers smaller kernels and the sweetest of the sweet. But Butter and Sugar is excellent as well. Sweet corn is one of the best things Summer has to offer.....
