I will be there this coming late October or early November for a day or two.
First time to be there and will most probably sked this with a Jazz game.
Any info/assistance on what to do in such short time?

Theater should be ok. What kind of cultural events are there? Is there a website I can monitor for those dates?
Would love to go hiking but I doubt the missus will go for that.
BYU often has great concerts and shows. You can check the schedule here when your dates get closer: https://arts.byu.edu/events/ (I imagine U of U probably has a similar arts calendar.)
BYU's Museum of Art often has cool exhibitions, so you can check their website (https://moa.byu.edu/exhibitions-2/current-exhibitions/) when the time gets closer to see if anything interests you. And it's free!
The dinosaur museum at Thanksgiving Point is pretty cool, albeit pricey. https://www.thanksgivingpoint.org/experience/museum-of-ancient-life/. There's also a great botanical garden there, although I'm not sure if late October would be a good time of year for that.
I think someone else already mentioned Temple Square--that's a must see.
If not hiking, the "Alpine Loop" scenic drive can be gorgeous. It goes from American Fork Canyon to Provo Canyon:

If you're not used to mountains, it will probably take your breath away. However, it closes for the winter. I'm not sure when that is (probably depends on when first snow is for the yeaer), so you should call before going--to find out the status you can call the Pleasant Grove Ranger District at 801-785-3563. Pro tip--if/when you drive it, it will look like there's a $6 fee per car, but if you just stick to the road and don't get out at any of the usage areas, the fee doesn't apply.
For a longer drive you could detour from the Alpine loop to Cascade Springs and walk around there (not really hiking, just walking).

I went out with my buddy last spring for five days and caught game 3 of the Clips series. While we stayed in Park City, we did spend a decent amount of time in SLC.
Bars: I went to about 4-5 bars and definitely liked Whiskey Street the most. Tremendous alcohol selection and cool vibe. We tried Keys on Main but it was a Thursday and it was closed when we tried late.
Restaurants: Fleming's. Really good, higher end steakhouse.
***** bars: Didn't do any. Fish bitched out.
didn't you also visit all five national parks in a single afternoon?
Those weren't in SLC.
