Honestly, all the answers I could give you would be second-hand interpretations of actual non-binary people. There are blogs, live journals, instagrams, etc., by actual non-binary people,I encourage you to find one or two that read comfortably for you.

Imagine if someone came along and said: okay, as a basketball fan you’re either a Celtics fan or a Lakers fan. Which one are you?

Sure, those are the most well known choices, but there’s a whole league of different options out there to explore!

Honestly I don't understand the psychological "why" behind this stuff (I imagine there isn't a universal why and probably different reasons), but I just accept it because it really boils down to respecting another person on a pretty basic level that requires little to no effort other than saying a different pronoun.
