No no no no. Reds aren't at their best like that, bc they get too mushy. Same with a gold. You want a nice russet Burbank in there.
Reds are great when they're roasted, or mashed.
They're better when they're younger, maybe half a fist size.My dad's cousins have potato farms in Idaho, so we go out every fall to pick potatoes off the conveyor belts as they are brought in from the fields. Delish! Spoils me for about anything else (except sweet potatoes).

They grow just fine. We don't grow any, because we do seed and our buyers primarily just want white potatoes. And cause we're racist and don't want none of them colored spuds.
